Menu plan

Well, a bit late, but here's our week's plan. We do need to get a couple more ingredients, but hopefully we can still stay under budget.

Friday: veggie burgers, hashbrowns & salad

Saturday lunch: cold sandwiches & chips

Saturday dinner: vegan seitan sausages, bubble 'n' squeak, red wine gravy

Sunday lunch: grilled cheese sandwiches, fries & salad

Monday: black bean & sweet potato burritos with salad

Tuesday: red wine asparagus pasta & garlic bread

Wednesday: vegan brats, coleslaw & baked beans

Thursday: spaghetti & tomato sauce

Friday: pizza

    Funny you should ask, because that's the one item on the menu I've never made and didn't have a plan for yet. NT put it down as an idea for using up our refried pintos, but I thought no way -- it's got to be black beans. Something about them and sweet potatoes just feels right.

    I looked around and there are recipes both for pureeing a mixture of the two ingredients, or for leaving the beans whole and the sweet potatoes cubed. That's more what I was thinking of, so I think I'm going to go with something like this: http://www.melskitchencafe.com/2013/02/black-bean-and-sweet-potato-burritos.html

    Of course, since I didn't really have a plan, I haven't got half of the ingredients listed here: fresh jalapeno, fresh cilantro, fresh limes, red bell pepper. But I've got canned chiles, and some super-hot pickled jalapenos, and bottled lime juice, so I think I can wing it and make it pretty yummy. Salsa and/or sour cream will be good additions, and maybe some raw onion for me and AS.

    Celery root/carrot puree. Love, Love, Love it! Check out Claire Robinson's recipe on Food Network. It's so simple. I add garlic and when I don't have shallot's, I use onion. I make a double batch and freeze it. Bon appetite! Smile

    Thanks for the tip! Celery root isn't a veg I come across too often in the grocery store, but we get it from our CSA in the late summer and I only know one good recipe for it. I bookmarked this one and will try it next time we get celeriac delivered. It usually comes around the same time as carrots, so that's handy!
