Well, a bit late, but here's our week's plan. We do need to get a couple more ingredients, but hopefully we can still stay under budget.
Friday: veggie burgers, hashbrowns & salad
Saturday lunch: cold sandwiches & chips
Saturday dinner: vegan seitan sausages, bubble 'n' squeak, red wine gravy
Sunday lunch: grilled cheese sandwiches, fries & salad
Monday: black bean & sweet potato burritos with salad
Tuesday: red wine asparagus pasta & garlic bread
Wednesday: vegan brats, coleslaw & baked beans
Thursday: spaghetti & tomato sauce
Friday: pizza

I looked around and there are recipes both for pureeing a mixture of the two ingredients, or for leaving the beans whole and the sweet potatoes cubed. Of course, since I didn't really have a plan, I haven't got half of the ingredients listed here: fresh jalapeno, fresh cilantro, fresh limes, red bell pepper. But I've got canned chiles, and some super-hot pickled jalapenos, and bottled lime juice, so I think I can wing it and make it pretty yummy. Salsa and/or sour cream will be good additions, and maybe some raw onion for me and AS.
