Friday night NT whipped up spaghetti with tempeh, garlic, olive oil, herbs and spices:
Saturday we had Spinach Noodle Kugel from Veganomicon. We agreed it was good. As in, we'll probably have it again for a change of pace, but it wasn't exceptional enough to go into the regular rotation. Mild, wholesome and pleasing, though:
Tonight we had chik'n parmesan (made with Boca spicy patties, and soy cheese for me). The sides were penne with tomato sauce and baked stuffed zucchini:

i know its a regular vegetarian food, but i just realised i havent had tempeh in AGES! thanks for the reminder!
tonight i made a vegetable pie. it was sort of an 'all-in' pie. to add flavour i added a few teaspoons of massaman curry paste it's got pumpkin, potato, succhini, 3 bean mix, onion, tomatoes and carrot with a puff pastry crust. fingers crossed it works out alright.
