365 days of dinner: Jan. 14, 2009

Last night we ate at our friends' house. They're quite adept at cooking vegan, having cooked for me often over the years, but they're also doing a cleanse where they only eat vegan, mostly whole-foods meals, so last night's was especially healthy.



There was sweet-and-sour red cabbage, Thai chickpeas over rice, and--my personal favorite--lima bean salad with sweet chili dressing. That is going into the lunch rotation when the weather's warmer! I had no idea that lima beans could be so huge and have such lovely texture, like butter beans. They've always been smaller and pale green with a weird texture whenever I've had them.

    Wow. That looks delicious. You need to post the recipes.
    Tonight, I made vegetarian (most likely vegan) chili from scratch. It's great on a winter night. Two nights ago I made vegan curried butternut squash soup from scratch. Also good for winter.

    Those do look better than any lima beans I've ever had.

    Of course, my only exposure to them was as part of frozen mixed vegetables as a kid. My mom insisted I eat them and I disliked them so much I learned to swallow them like pills!

    Keep up the great posts. I love seeing your dinner, even though they do set off cravings for me!

    'K, I will try and get the recipes from my friend. The trick is these were different lima beans--I'll have to check with him about that too.

    Look for the recipes in this post in a day or two!
