365 days of dinner: Jan 11, 12 and 13, 2009

I've been faithfully taking photos of dinner but haven't gotten around to loading them onto the computer, so here are three nights of dinner. Smile

Sunday night: Mock chicken satay over rice. Loved the marinade, but we won't be getting this mock chicken again. It's a kind you rehydrate in water before cooking, and it just doesn't have a nice enough texture or ability to soak in the flavor, compared to other mock meats.



Monday night: Polenta with tomato sauce, and oven-roasted garlicky zucchini (which NT had cut up and put on top of his polenta by the time we remembered to photograph it). The polenta, we all agreed, was slightly on the soft side, but still delicious, as were the sauce and zucchini.



Tonight: Chickpea cutlets (thanks Kashi for reminding me to try this recipe!) with "amazing chick'ny sauce" (a recipe I randomly found on the Web and use ALL the time), lemon-butter-pepper broccoli, and AS's famous biscuits. (Well, famous in our home.)

    Okay, I'm thinking the satay and chickpea cutlets sound good! We had cheese quiche tonight, dal with rice and chutney the night before, and homemade garden burgers (supposedly the "real" recipe from Top Secret Recipes) the night before that. It's been good eating!

    And what exactly is the "chicken-y sauce?"

    Yes, the satay sauce was amazing when we had it on tempeh before, and will be good on other things like tofu. The chickpea cutlets are from Veganomicon and they've got gluten so they're nice and chewy. I've yet to make a really good veggie burger that doesn't threaten to fall apart, so it was nice to make a pattie that stayed together. I'll have to try the Top Secret one!

It lends itself well to variations: I use fresh garlic and onion, sauteed for a bit before the rest of the instructions; button mushrooms instead of portobellos; dried red pepper flakes in place of "chipotle seasoning"; and powdered veggie broth instead of bouillon cubes. One more thing: I mix the flour in a bit of cold water to make a runny paste before mixing into the sauce, because otherwise the flour seems to clump up.

    What did you think of the chickpea cutlets? I'm having a chickpea cutlet sandwich with lettuce and vegan mayo for lunch today!

    I really liked it! Its mild flavor will make it go well with anything, and it's pretty easy to make. I didn't go for rectangles per directions, just mashed them into circular patties. Even easier!
