Gratitude photo #1

Here is my first gratitude pic of the year: my dinner! Hoppin John, braised mustard greens and cornbread. Not pictured: butter for the cornbread and hot sauce for the hoppin John. I'm very grateful for all the wonderful vegan food available to me and for the opportunity to cook with lovely ingredients like shallots, greens, and beans and rice, and to share them with my family. AS made the delicious cornbread. I chose to cook this meal, of course, because of the Southern superstition about eating black-eyed peas on New Year's Day being lucky.

    Oh yeah, I'm southern born and that is what we had for lunch: Blackeyed peas, cornbread, greens. Mmm-hmm. Big Grin I have converted my Pennsylvanian husband to many a southern food. Happy New Year.

    Looks great! My DIL made corned beef and cabbage, then worried that she made a St. Patrick's meal instead of a New Year's meal! I think she's making Hoppin' John today.

    Yumm! So much to be thankful for. We did a mix - sauerkraut (what my family has traditionally made on New Years Day) as well as the blackeyed peas! Yours look delicious Smile

    I really do believe our bodies are our temple, and as such, we should choose with care what food we consume. This looks very healthy. So glad you're doing the gratitude thing with me!

    I agree, but to be honest, I'm not very devout Wink, especially over the holidays. This is stuff I love that happens to be healthy. Some of my favorite food and drink is ... not so much. But I like to think I strike a balance.
