Menu plan

Our grocery budget seems to be on track, and with our vacation coming up (when we won't need grocery money because we have spending money already set aside), we should actually be able to have some extra money stashed in the budget for household needs that tend to derail our weekly spending!

This is a bit late, but here goes:
Saturday lunch: leftovers
Saturday dinner: Pasta w/roasted red pepper sauce
Sunday lunch: "full English": eggs/tofu, baked beans, fried potatoes, fried tomatoes, veggie bacon/sausage, toast
Sunday dinner: "cheeseburger quesadillas" (cheese quesadillas w/veggie ground beef), lettuce and tomatoes, applesauce, fries
Monday: penne vodka
Tuesday: Fried rice w/pineapple, carrot, green pepper, shrooms, tofu; Pot stickers
Wednesday: spaghetti & spinach-tomato sauce
Thursday: szechuan "beef" & broccoli, rice
Friday: Tater tot hot dish

    It sounds great! What kind of veggie ground beef do you use? We used to use quorn, and I liked it. But it does have wheat... I am not great with soy either, unfortunately...

    We use Morningstar or Boca. Both I think contain wheat and soy. (I eat a ton of both and don't seem to suffer any ill effects, which is lucky as a vegan!) We also found Gardein makes them now, and they're great too! I prefer Boca and Gardein because they're strictly vegan, whereas the Morningstar has egg and milk ingredients (albeit far down on the ingredients list).

    I couldn't find any GF/soy-free commercial crumbles in a quick search online, though I did find this intriguing recipe: http://veganwithout.wordpress.com/2011/01/02/quinoa-or-millet-crumbles-ground-beef-substitute/

    Of course, it looks labor intensive, which kind of defeats the purpose of crumbles (we use them as a lazy way to add texture/flavor to a dish)!

    Thank you for checking! We end up just doing chicken, but of course we're not vegan. We only eat fish and chicken (no beef or pork or other mammals). But I'll bet I'd do better on a vegan diet. We eat only goat or sheep dairy (no cow). And the list of other foods I can't eat goes on and on and on...
